Camu Camu (Vitamin C) Cake
Loaded with Camu Camu, (Vitamin C) this cake is surprisingly tasty and actually has no carrots in it. It has the same texture and taste and uses Camu Camu (vitamin C) instead. I prefer it with a simple lemon icing but i've given a cream cheese icing too. This cake offers your immune system a super vitamin c boost.
- 2.5 cups Plain Flour
- 4 tbsp Organics NZ Camu Camu Powder
- 2 tsp Baking Soda
- 4 Eggs
- 1 tsp Salt
- 1 tsp Cinnamon
- 1 cup Brown sugar
- 370 ml Vegetable oil
- 135g tin Crushed Pineapple
- 1/2 c Walnuts (chopped)
- 100 g Cream cheese
- 60 g Soft butter
- 1/2 cup Stevia powder icing sugar is another option if you don't have Stevia.
- 1/2 lemon Lemon juice
- 2 tsp Lemon zest
Preheat oven to 160c.
Mix dry ingredients together, then slowly add other ingredients as per the order above.
Pour into a 26cm round tin.
Bake for approx 55 min or until the skewer comes out clean.
When the cake has cooled, ice it.
Decorate with berries, nuts or dried fruit.
